Soil: clay - limestone
Grape variety: 100 % Merlot
Vinification: Leaf removal to guarantee a better sanitary state. Picking early in the morning. De-stemming and placing in small vats. Vatting period of 3 weeks with alternating punching down and pumping over. Temperature control between 25°C and 28°C. Pouring into demi muids for malolactic fermentation and ageing for 15 to 18 months. Refining of the different demi muids in vats for two months before bottling.
Degree: 13.5% vol.
Colour: Beautiful dark garnet
Nose: Aromas of fruit liqueur and mocha
Palate: Ample and long notes of liquorice and coffee
